Pineapple Fried rice

Originating in Brazil and Paraguay,pineapple today is widely cultivated in many tropical nations,from Southern America,Central America and the Caribbean to Australia,the Pacific islands and other Asian and African countries.Rich in enzymes,pineapple is good for both skin and congestion.This new tasty dish-Pineapple fried rice with seafood,will give you a  new perspective on an old favourite.

This dish is served in the hollowed-out halves of the pineapple.It not only looks great,it tastes great too with its extra ingredients of red shrimp and colorful tomatoes that have been added to fried rice.You need diced black tiger shrimp,cuttlefish,ground crab meat,corn,salted egg yolks and diced sweet peas and carrot.

Boil the diced carrot,sweet peas and black tiger shrimps in water.Then heat the wok and stir-fry the shrimps,cuttlefish and crab meat for a couple of minutes.Add the rice,diced carrots,salted egg,peas,chopped pineapple and seasonings and stir-fry for another 3 minutes.

Choosing which type of rice to fry is important to perfect the dish.Continue frying onions and add the mixture of cuttlefish and corn and stir until all the ingredients are mixed.Add fried rice and spices including salt and sugar to thix mixture and stir it thoroughly.

The pineapple is sliced in half and hollowed out by removing its flesh.The above mixture is placed into the pineapple halves and then topped with black tiger shrimps and decorative fruits before seving.
